Papas arrugadas
Difficulty: Easy.

Ingredients.

1 kg of dads. (Potatoes)
Salt and water.

Dads are chosen smalland of rounded form, which they are as homogenous possible, they wash themselves very well and begin with skin in a casserole (to being a possible discharge and of great size). There is added water (the ideal would be water of sea) up to 2 or 3 cm of the fund of the casserole and agood fistful of salt.

They put themselves to high heat when they start boiling we lower the fire and cover the casserole with a thick rag and on him the cover. We allow to boil until the water evaporates, and in this moment we wave the casserole vertically. They allow to rest a few minutes covered with the cloth.

There is another much less authentic way of doing them that he consist of boiling them with water and salt and later to bake to strong oven a few moments, if to use the rag.

They use normally accompanied as Mojo Picón or Mojo Verde.

Mojo Picón . Difficulty: Easy.

Ingredients.

1/2 Teaspoonful of cumins.
4 Garlic cloves.
1 Bobby dries or colored pepper.
1 teaspoonful of paprika.
2 spoonfuls of olive oil.
2 spoonfuls of vinegar.
Salt and water.

We crush in a mortar the cumins , the garlic cloves, the Bobby dries or colored pepper and the salt, when it is crushed well there is added the paprika (piquant if there is wanted more picón), it is stirred quite very well and one throws the oil without stopping rummaging.

When all it should be close well is added the vinegar and a littler water (according to the strong thing that should be wanted), we continued rummaging up to obtaining a uniform consistency.

Mojo Verde. Difficulty: Easy.

Ingredients.

1/2 Teaspoonful of cumins.
4 Garlic cloves.
Coriander or parsley.
3 spoonfuls of olive oil.
3 spoonfuls of vinegar.
Salt and water.

We crush in a mortar the cumins, the garlic cloves, the coriander or the parsley (one of the two) and the salt, when it is crushed well it turns around quite very well and one throws the oil without stopping rummaging.

When all it should be close well there is added the vinegar and litte water (according to the strong thing that should wanted), we continued rummaging up to obtaining a uniform consistency.
